After months at sea, with ships laden with cinnamon and cumin, the Portuguese docked in the ports of Little Faifo, now known as Hội An, were astonished. Immersing themselves in the crumbling streets, astounded by the beauty of the rice paddies, the famous dyed silks, intricate ceramics and local spices, they began to establish the most exclusive trading port in all of Asia. It was only when visitors began sampling grandmother’s traditional fare, and infusing their own seasoning and style to time-tested Vietnamese recipes, that the infamous cuisine of Hội An was born.
